Day 46- Seafood Sensation!

Hello!  Today was a great day!  My mom came over this morning and I fixed her a good, healthy breakfast.  She has been wanting to try my buckwheat cereal (the great recipe that my friend passed on to me) and smoothies.  So, I whipped it all up and she loved it!  We visited for a few hours, then she had to get going.  But she called me early this evening and said she felt great all day long!  I was so happy to hear that.  She is going to start following a lot of my diet, especially the breakfast stuff. 

This afternoon, my husband and I went shopping together and bought a bunch of shrimp and crab for dinner.  Oh my, my.  I LOVE shrimp and crab.  We also bought rice pilaf to go with it, along with fresh pineapple.  What a treat.  I was pretty careful with my portions.  I have started to re-introduce grains back into my diet, just a tiny bit.  It is VERY seldom that I eat grains.  Too many grains just don't agree with me.  But the rice pilaf tonight was delicious! I made the shrimp with tempura, and I was a little reluctant to eat it, but I did just fine.  I was going to bake the shrimp, but the guys love the tempura, so that's what I made.  There was a very thin layer of it on the shrimp.  Not gobby and thick like some places make it. 

Now I'm just relaxing for the night and getting ready for the weekend.  More cleaning to do.  Blech.  Plus, some yard work, if the weather permits it.  It's all coming along, though.  Spring cleaning will definitely pay off!  :)

  • Take Time to Relax. Allow yourself to de-stress at least once a day. The occasional massage or spa time is a big help. Don't have a masseuse or spa nearby? Maybe a massage chair is what you're looking for.

    Day 45- Eventful day

    Good evening everyone!  Today was a great day.  I went to tea with my mom this morning at the Ibis Caffe.  We haven't done that in a few weeks.  We normally have our "Tuesday Tea" but the last few weeks have been kind of busy for both of us.  So, we managed to get together today.  I love the Ibis.  I actually ate breakfast there, too.  I went off my plan a little, but not too bad.  I really wanted one of the "Ibiswich" breakfast sandwiches.  That is a bagel with scrambled eggs and provolone cheese on it.  It is delicious!  So, I ordered it.  I was hoping they had a good whole wheat bagel, but the only kind they had was asagio cheese.  I ate very good the rest of the day.  Plus, I did quite a bit of exercising today.  So, I hope I burned that bagel off!

    I went over to an elementary school today to teach ZumbAtomic at my friend's PE class.  I taught the "Little Stars" class for her first graders.  This was my first time actually teaching, and it was quite interesting.  Kids at this age have very short attention spans, and at one point in the class, a few of them were rolling around on the floor.  LOL  It was two of the boys that did not seem to be into it at all.  I think little girls will be more into this program.  But there were some boys that seemed to be liking it ok.   For the most part, it was a lot of fun!  We did 3 dances, and they really seemed to like it.   Towards the end, one little boy said to me,
    "Teacher, I'm EXHAUSTED!"  
    Whaaaa?  I exhausted a 1st grader?  I never thought that would happen. Kids that age are so full of energy, but I guess he felt like he had enough!  hee hee  I told him to just take it easy on that last song since he was so tired. 

    Tonight I taught Zumba at the church, and I was able to teach a ZumbAtomic routine there, as well.  There were a few little ones there with their moms, so I thought it would be fun to throw one in.  They loved it, and so did the adults!  I get a kick out of seeing how much the grown ups get into it. 

    So, tomorrow I have a goal to get another room clean.  I didn't have time to clean today because there was just too much going on.  It is either going to be the laundry room or dining room. Yuck, yuck, and double yuck.  But it needs to be done.  Blah.

    Wellness Tip of the day:  If you want to burn more calories in less time try using the stairs in your home as an exercise machine. Climbing stairs for 10 minutes burns 2 to 3 times as many calories as walking for an equal length of time.

    So....who is watching the Royal Wedding?  I have it all set to record on DVR.  I think Kate Middleton is just stunning! 

    Day 44- Mission accomplished! (Well, one of them)

    Hey folks!  Well, I managed to get ALL of my computer room and living room clean and spotless.  Wahoo!  I will admit that it makes living a lot easier.  Just hate the process I have to go through to get there  :)
    So, today was filled mostly with cleaning and running a few errands in town.  The highlight of my day was when it was finally time to go teach Zumba.

    An good friend of mine from high school messaged me on facebook asking me when I teach classes, so I told her I was teaching one tonight and to please come.  So, she did, and it was great to see her!  This gal was one of my SkyView peeps and such a darling gal.  I often envied her because she owned horses, was in the rodeo club, barrel raced in rodeos, and was a true cowgirl through and through.  Like I said in a previous post, I sang and played country music, and hung with the crowd, but I always wanted to be the real thing.  (Later in college I met a cowboy and got to ride his horses all the time.  When we broke up, I missed the horses more than him!  LOL)  Well, she LOVED Zumba and I was just tickled.  I told her to keep coming back because it takes time, practice, and muscle memorization.  After a month or so, it is a piece of cake. 

    Just like me, she is trying to get to a healthy weight, so she was happy to come and do Zumba for the first time.  I told her she was going to get addicted!  Weeeepah!  She is going to try and come when her work schedule permits it.  Class was fun and energetic, and I left there floating on a cloud.  After class was over,  I stayed to practice a few of my ZumbAtomic routines.  I told the ladies that anyone could stay after and join me to see what it was like, just incase they wanted it for their kids.

    4 ladies stayed after to see and try it, and let me tell you....they LOVED it!  It is so cute and fun, and they were having the time of their lives penguin dancing to "Freezer" and skipping around to "Electrificate."  One lady told me that I should incorporate a ZumbAtomic routine into my regular Zumba class.  I just might do that!  It was awesome to see them let go and have kid-like fun. 

    I would like to share a new recipe with you all.  This is a recipe from a "Healthy Recipes" book that I received from a friend a few years back.  Here it is:

    Beef Teriyaki

    1 lb. extra thin beef steaks or chicken breast
    8 scallions, cut into short lengths
    1 yellow bell pepper, seeded and cut into chunks

    Sauce mix;

    1 tsp cornstarch
    2 Tbsp. dry sherry
    2 Tbsp white wine vinegar
    3 Tbsp. soy sauce
    1 Tbsp. dark brown sugar
    1 garlic clove, crushed
    1/2 tsp. cinnamon
    1/2 tsp. ground ginger

    Place the beef in a shallow, nonmetallic dish.  To make the sauce, mix the cornstarch with the sherry until smooth.  Place the vinegar, soy suace, sugar, garlic, cinnamon, and ginger in a bowl and stir in the cornstarch paste.  Pour over the beef, then turn to coat and chill for 2 hours. 

    Preheat BBQ grill.  Remove beef from the sauce, draining well.  Pour the sauce into a pan.

    Cut the beef/chicken into thin strips and thread onto several presoaked wooden skewers, alternating each strip of beef/chicken with pieces of scallion and yellow bell pepper.

    Gently heat the sauce until it is just simmering, stirring occasionally.  Cook kabobs on grill for 5-8 minutes, turning and basting the beef /chicken and vegetables occasionally with the reserved teryaki sauce.

    Arrange the skewers on serving plates and pour the remaining sauce over the kabobs.  Enjoy!

    10 baby carrots

    Dinner-
    3 oz grilled chicken breast
    1/2 c. garlic mashed (red) potatoes
    1 c. cooked cabbage with butter spray and vinegar
    16 oz water

    After-dinner snack-
    Sugar free cherry jello  (yum)

    Day 43- Cleaning day

    Well, nothing real eventful happened today.  I spent most of my day organizing and cleaning.  Seems pretty overwhelming at this point.  But I am determined to get it all done before next week.  I will be so glad when it is done.  And when it is done, I will keep up on things weekly.  I guess I just have so much on my plate right now, that I forget to keep up in my household duties.  **sigh**

    I got my first ZumbAtomic gig today!  Well, not really an official gig, but a practice session.  My friend wants me to come to her school where she teaches PE and teach her 1-5 graders.  This Thursday I will go in and teach the first graders.  They will be in the Little Stars class.  Can't wait!  She said that they will love it, and I am excited to show them. 

    I did not get any exercise in today.  Blah.  I am not happy about that at all.  I focused on cleaning this darn house all day.  Plus, I was still working on products for an order.  I am going to run on the treadmill in the morning and then teach my usual class tomorrow night.  Yay! 

    I am off to bed now.  I have to put this little clip on my finger all night to test my oxygen levels while I sleep.  Then I have to take it back to the Dr. tomorrow and then she determines whether I need to go into a sleep center for a night and be tested.  Fun fun.  Good night everyone!  Here is what I ate today:

    Day 42- Busy day!

    Wow....am I glad to be hunkering down for the night.  It is quite late, but I did not want to skip writing in this blog.  I have skipped before, then I just have to make it up the next day.  It has been non-stop going all day long.  I started my morning working on an order (my Mystic Oasis products) and worked up until noon.  Then I had to get ready to go sing at another senior place today.  This place is called Legacy House of Logan, and it is actually an assisted living home.  As you can see, I stay plenty busy singing for the senior citizens!  But I love it so very much.  They were all so cute today, and so thankful for the music.  I love my job!  :)  One little lady that was sitting on the front row was singing along with me the whole time with the loudest voice she could project!  LOL  At times, I couldn't hear myself, but that is totally fine.  I loved every minute of it.  And I love every one of them.

    When I was done, I headed straight over to meet my son at his school.  I had to make sure he made up some missing work, so we were there for a bit.  Went home and started to do more cleaning.  Oh, I have so much de-junking to do.  Yuck.  I told you all here not long ago that I was going to do a room a day.  Well, I haven't been very successful.  I started the computer room a week and a half ago and didn't even get half way done.  Well, I got a little further today.  The organizing is coming along good, now I just have to clean really, really good in there.  You see, I have a tendancy to clean only on eye level.  When I finally look up or down, I see there is a real problem.  I need to look all around me when I clean.  Things tend to grow on the ceiling or collect on the floor that really need attention.  So, all of that detailed cleaning is happening this week.  I hate to clean.  I would much rather be rehearsing Zumba, sewing, learning new songs to sing, making lotion or soap.....you know, anything but clean.  Not my cup of tea at all.  BUT....when things are finally clean, it helps me relax and enjoy my home more.  So the reward will be worth it. 

    Here is a picture of the week.  I took this with my computer a few minutes ago.  Actually, there are two.  One of me, then one of me and Lola, my female Pug.  I need to get another body shot pic on here.  I am sure starting to see a difference in my appearance.  It is a great feeling indeed!  My clothes are starting to feel loose and I can tell through my face and neck that I am looking different.  I am not going to buy any new clothes for a while.  So I will be at that awkward stage for a bit where my clothes look kind of funny on me. 
    I know....this is a goofy picture.  It is a feature on my laptop where you can snap a photo of yourself from a webcam and then put a funny frame around it!  hee hee  Here is the one on my puppy and me.



    This is Lola girl.  She is very, very spoiled.  But all of my animals are.  I have 4 dogs.  3 Pugs and a yellow Lab.  I will post more pictures on here as I go along.  I love animals, children and old people.  I am blessed to have all 3 in my life. 

    With this busy day, I was able to stick to my eating plan good.  It is not a problem anymore, and comes so naturally.  However, I was not able to do any type of exercise today, unless I count my cleaning as exercise.  I am looking forward to getting some sort of a good workout in tomorrow. 

    Hey, how about that Kirstie Alley on "Dancing with the Stars?"  She is pretty dang amazing.  She and Maks did the Samba tonight, my favorite new dance.  The Samba is hard, but she did it so well!  And I think she is looking SO GOOD!  I can tell she is slimming down because of all that dancing.  Keep going, Kirstie!  ALL that booty shaking will have you in great shape in no time.  I, for one, know this first hand!  ;)  I am on my way!

    Day 41- Happy Easter!

    Hope that you all had a very wonderful Easter today.  Our Easter here was great.  I prepared cheesy potatoes and strawberry delight cake for easter dinner at my mom's house.  We went over to mom's house around 4 for dinner, and it was so good!  Once again, I ate only a little of the main course and did not have any dessert.  But I sure wanted to!  My sister-in-law loves this strawberry delight cake and I promised her that I would make it.  This is the sister-in-law pregnant with twins!  :) 

    I forgot to mention yesterday that I treated myself to a pedicure.  Wow, was that nice.  My feet were sure in bad shape, so it was wonderful to get them all fixed up and rubbed.  My toenails are now a bright, hot pink and ready to show off for Spring!  Ladies, go out and pamper yourselves once in a while  It is so worth it.  And you are worth it.

    This blog is going to be short tonight, but I will be back tomorrow.  This week is a rather busy week, but I will always make time for my New Lifestyle blog.  Goodnight all!  Here is what I ate today:

    Day 40- Water for Elephants

    I went to the movie tonight with my husband and son, and we saw "Water for Elelphants."  I know, I know.  I was going to make this a girls night out event, but my husband said he would take me, and I was in shock about it, but I didn't want to pass up the opportunity!  LOL  It was pretty good, but as usual, I am always somewhat disappointed in the movies after I read the books.  But it was good, and I loved the cast, especially Robert Pattinson.  It was nice to see him in another role aside of the sickly, white vampire he portrays in "Twilight."  The man's talent goes so much further than that movie. 

    Reese Witherspoon was charming and beautiful in her role, and to me, she has always looked like the original Barbie Doll in the face.  Christopher Watltz played the cruel, dispicable August.  Great casting! 

    I enjoyed the day with my family, and made an Easter dinner for us.  Tomorrow is the big Easter dinner at my mom's house.  I made ham glazed with mustard and brown sugar sauce, chessy potatoes, deviled eggs, rhodes rolls, and green salad.  I enjoyed a little of the ham and potatoes, but not much at all.  I did enjoy the deviled eggs and salad, but NO bread.  Sad, but true.  I love bread, but just cannot have it. 

    I remember when special occasions came along, I always used that as an excuse to put my "diet" off for another day.  I do not do that anymore.  I either just stick to the healthy choices, or end up having just a little, like I did today.  There are special occasions that come along all the time.  Remember that.  But you can survive.  The occasions are about the celebration, not the food.  Although that is how we are conditioned.....to attend the party and eat the food.  It is our culture.  But we can change if we choose to do so. 

    I would like to start adding a wellness tip for the day on here everyday.  There is a lady on my Zumba newbie page, and she always send the best tips.  So, these tips are not my own, but I would like to share them with you.  If I do come up with one of my own, I will be sure to let you know!  :)

    Here is the tip for today:

    WELLNESS INSPIRATION TIP: Slow, deep breathing brings air to the lowest part of your lungs and exercises your diaphragm. Deep breathing relaxes your mind and body, massages your internal organs, calms emotions and promotes restful sleep.

    I also wanted to let you all know that I tried my friend's buckwheat cereal recipe for the first time this weekend.  I have been preparing regular buckwheat cereal from the box directions, but she emailed me a wonderful recipe that is just delicioso!!  I posted it on Day 23, but I will copy and paste it here right now.  If you are a hot cereal lover, you will absolutely love this recipe!  Here it is:

    "I make a delicious cream of buckwheat cereal from raw buckwheat groats. I rinse and then soak the buckwheat in the fridge in a jar...it will last a couple of weeks. This brings out the nutrients and makes it softer. I put about 1/4 cup of the soaked groats in a blender with a banana, some cinammon and about 2 inches of water..add some sea salt, blend it up and cook it on the stove on low heat. It's ready in 5 minutes and it's delicious. It's also great with fresh fruit, yoghurt, flax oil or a little maple syrup or agave nectar drizzled on top. Um Yum! ♥ (It's my famous buckwheat recipe..lol..everyone who comes over to my house requests it!"

    I bought the raw buckwheat groats at a health food store here in town called "Shangri-La."  For those of you that live elsewhere, you can find it at any healthfood store in your town.  I was amazed at how delicious this was.  If you don't like bananas, you can substitute them with unsweetened apple sauce.  So good, and so good for you!

    Day 39- Great day at the B.C. Senior Center

    Hey all!  I have sang at senior centers twice this week, and that is so fulfilling to me.  Today I sang over at the Brigham City Senior Center.  They had a big Easter Party, and when I arrived, all the people there were coloring eggs.  There were even little ones there helping.  I had a full hour of good music planned, and as always, it was heart warming and fun.  These senior citizens are the most gracious, loving audience I have ever played for.  Back in the 80's and 90's, I played with various country/rock bands in the clubs and bars.  Of course, these rough crowds were fueled by rowdiness and alcohol, so no matter what song we played, or even how bad or good we played, we were rock stars in their eyes.  Now, I am not knocking the bar crowd, because that is where I got my start in music.  It was those people who were my bread and butter and came into the clubs to see and dance to the band.  A lot of good folks patroned those places, but there were people who were under the influence constantly, and never really appreciated the music for what it really was.  These seniors love every bit of music that I give to them.  I mostly do songs from their generation, and they are truly grateful for it. 

    Years ago, performing was a big part of my life.  Even though I loved music (and still do) my performing was just that.....performing.  I loved being on stage and entertaining and pretty much being the star.  Today, that is all different.  It is not about me anymore.  It is about sharing my music with others and making them happy.  Singing for the senior citizens is a whole new world, but it is MY world now, and I love it.  They are the cutest people ever, and I love them dearly!  I hope I can continue to do this for a long, long time. 

    The same thing goes for Zumba.  I LOVE sharing the gift of music and dance with others.  This why I certified as an instructor.  I want to make everyone feel as good as I do when I am moving and grooving.  Even the little seniors in Brigham were asking me about teaching Zumba Gold to them.  It made my heart sink because I have been wanting to teach Zumba Gold very badly, but there are no Gold workshops in Utah right now, and I don't think there ever has been.  I promised them that as soon as I was licensed, I would be over to teach.  I do not dare teach regular Zumba to these people because
    I don't want any of them to get hurt.  They need a program suited for them.  I may have to go to Arizona or Idaho to certify.  I would LOVE LOVE LOVE to teach Zumba Gold to the seniors.  They really want to have some fun exercise!  Plus, in the Gold program, there are excerises done from sitting in a chair. 

    Anyway, I am so lucky to sing on the senior circuit along the Wasatch Front.  These people are amazing and make me so happy everytime I see them!  My band days are long gone, but I am blessed to be able to go and perform with just my guitar and vocals in intimate settings like this.  Life is good.

    Tonight my family and I ate at Golden Corral.  I did good and filled my plate from the salad bar.  Lots of things have been added since the last time I ate there.  They have a bread station with all kinds of different breads and a chocolate fountain.  Oh man.  But salad was all that I had, and I was content. It was nice leaving there and not being totally stuffed.  It is just nice being in control.  :)

    Today was a great day.  It is so nice to wake up every morning now and have energy and feel good.  My eating now is a breeze and has become 2nd nature.  Yay!  I made it through the toughest part.  I think that is the test.  Once you can get through the tough part, then you are home free.  That is why I have failed so many times before.  I never stay consistent, and always have failed after just one week.  As you know, I had an off day last week with the baby shower, but I dusted myself off and got right back on track.  Super great feeling! 

    Later on today, I went to my son's school for Parent Teacher Conference.  I am always glad to hear that he is nice and polite and does a good job in school.  I couldn't ask for a better boy!  He is my whole world. 

    Tonight I taught Zumba at the church.  There was a big crowd, to my surprise.  It has turned into such a great class, and I am so glad that I can share the joy of Zumba with the people here in the community.  They truly seem to love it and I see new faces every week.  I even taught a little bit of my ZumbAtomic to my friend's little boy after my main class was done.  It was so much fun showing him and he was full of life and smiles while we were dancing.  Dancing and music are magical.  Everyone should be able to enjoy the wonders of both of them.  Fortunately, I have been blessed with both all of my life.  Without them, especially music, I would be a lost soul.  I think I speak for a lot of us here!

    This same friend of mine shared a recipe with me, and I would like to share it with you.  It is wonderful! 

    Healthy Thumbprint Cookies:
    Makes about 30 cookies

    Fill these oat and nut cookies with your favorite fruit juice sweetened jam. Strawberry, raspberry and apricot jams are particularly good. Ingredients:

    1 cup almonds or pecans
    1 cup rolled oats
    1 cup whole wheat pastry flour
    1/2 cup safflower or canola oil
    1/2 cup maple syrup or brown rice syrup
    1/4 teaspoon salt
    Fruit juice sweetened jam

    Method

    Preheat oven to 350°F. Put almonds and oats into a food processor and pulse until coarsley ground. Transfer to a large bowl and add flour, oil, syrup and salt. Stir to combine well. Roll walnut-sized balls of the dough in the palm of your hand to form each cookie, then arrange on 2 large baking sheets, spacing cookies 2 inches apart. Press your thumb gently down into the center of each cookie to make an indentation. Spoon a scant teaspoon of jam into each indentation.

    Bake cookies until golden brown and just firm around the edges, 15 to 20 minutes. Transfer to a rack to let cool completely, then serve immediately or store between layers of waxed paper in an airtight container.

    Per serving (2 cookies/46g-wt.): 210 calories (110 from fat), 13g total fat, 1g saturated fat, 0mg cholesterol, 40mg sodium, 21g total carbohydrate (3g dietary fiber, 9g sugar), 4g protein

    Small spinach salad sprinkled with balsamic vinegar

    Smoothie with 1 c. almond milk, 1 scoop greenberry shakeology powder, 1 apple and handful of spinach

    After-dinner snack-
    1/2 c. sugar free jello

    Day 37- Good Old Days

    Hello friends!  Today was an exceptional day.  I sang at the Hyrum Senior Center, and they had the neatest program.  About a month ago, the director called me and asked me if I would come and perform for their "Old Days" program.  She requested that I sing a bunch of old time songs.  When I got there, I noticed she had a table all set up with different things like old lp records, hats, yo-yo's, etc.  She talked about how back in the old days, kids were never bored, and if they even mentioned it to their parents, they were in deep doo doo.  Nowadays, that is all we hear from kids..."I'm bored, I'm bored!" 

    She was asking most of the folks there what type of games they played when they were kids, and I was so amazed at what they could do or make to keep them entertained.  But that was the way life was back then!  Now, I was born in '66, and when I was a kid, I had a lot more than what those folks did, but still....I did not have what kids do today.  This day and age of electronics can be a bittersweet thing.  I am definitely one that loves my gadgets, but there was a time I did not have these things, and I survived!  We played outside and rode our bikes.  My house was constantly filled with music, and when I learned to play the guitar at age 10, there was never a dull moment while I was alone in my room.  My record played got a lot of good use, and I would make up songs and dances till I dropped from exhaustion. 

    But these folks today came from an era that was grand.  They were around when the first movie in color was released (Wizard of Oz).  I even sang "Somewhere Over the Rainbow" and they sang right along with me.  I just loved hearing all their stories of how they lived and survived, and it all worked out fine.  In fact, people didn't have much back then, and I think they appreciated things more.  They talked about how they would listen to the radio before television even came out, and how they used their imaginations while listening to a program being broadcast.  I heard about everything from attending 10 cent movies to playing hide and go seek. Yes, there were hard times, but people worked mighty hard and survived, and were very happy. 

    Women's fashions were feminine and lovely.  I enjoyed hearing how the women talked about wearing their best dresses on Easter Sunday accompanied by lovely hats and dainty gloves.  How times have changed!  Here is a little poem that the director shared with everyone today:


    THE MOVIES

    When I was young, a long time ago
    On Saturdays we would go to a show
    The admission then was only a dime,
    Oh, we had such a wonderful time!
    The girls would sigh and throw the hero a kiss,
    When the villain came on, we would boo and hiss
    The cowboys were all handsome and strong,
    We knew that they could do no wrong
    We always bought popcorn and a drink
    Then, it was over, quick as a wink
    Oh, how I miss those happy ways
    We all enjoyed in the GOOD OLD DAYS!


    When I was a kid, I lived with my grandparents, and I remember that once a year, certain movies would come on the tv like "Sound of Music" or "Willy Wonka and the Chocolate Factory."  It was a special occasion to settle in at night and watch these shows.  My grandpa and I would never miss any of them.   Now you can rent them on dvd and watch them all you want!  Cartoons were classic and brilliant to watch.  Our favorite was Bugs Bunny and The Pink Panther.  Oh, how I miss those days. 

    I just had to share this with all of you.  It enriched my day and really made me stop and think that the simple things in life are the best.  I loved how I would sing an old song today, and they would close their eyes and sing along with me.  Priceless. 


    This also leads me to say that even the food we eat is different.  Back in those days you didn't see hardly any processed food.  Everything was whole and natural.  Let's get back to the basics with our food!  My eating plan is very basic.  My body and mind has changed since I started this new lifestyle 37 days ago.  I am down 22 pounds, and I think clearer and move so much better.  While teaching Zumba, I can even jump!  That is progress for me!  I have inspired a few others to follow my plan, and I know that their health is benefitting from it, too! 


    This morning, I went to the Dr. to get checked for sleep apnea.  I have to go back Friday to pick up this little clip that I have to wear on my finger at night, and it records my oxygen levels.  After wearing that for a night or two, I take it back in and they check it, and if the levels are low, I have to go to the sleep center one night and be tested with all these wires hooked up to me.  Fun, fun!  Then if I have sleep apnea, they will give me a CPAP machine to wear at night.  I heard they are wonderful and keep you from snoring all night long.  My cousin who educated me on this told me that sleep deprivation causes all kinds of trouble like weight problems and fibromyalgia, which is exactly what I have.  She said when you finally get the sleep and oxygen that you need at night, your body functions a whole lot better.  I am hoping they can get to the root of my problem because I know I snore horribly while I sleep! 

    She checked my blood sugar level, and that was wonderful.  Everything else was good, and best of all, stepping on the scale was exciting.  That has never been an exciting thing for me!  But today was because I have been sticking with everything so good.  See, it all pays off!  Remember, if I can do it, YOU can do it!

    1 bowl creamy buckwheat cereal with almond milk
    1 c. green tea
    32 oz water

    Mid-morning snack-
    5 baby carrots
    1/2 c. sliced jicama

    Day 36- New Recipes!

    Good evening everyone!  What a nice, calm day it has been.  I got up and got my son off to school, then took my sister-in-law to breakfast for her birthday.  Lordy, Lordy....she is 40!  (I had to tease her a little about that today!)  We were both actually good with our food choice at the restaurant.  I am glad I can be a good influence on others!  :)  We both had oatmeal with a sliced banana.  Yum!

    I got to practice my ZumbAtomic today.  I think I finally have the little penguin dance down (so cute).  It is called "The Freezer" and the kids have to dance around like little "penguinos."  It is very high energy and adorable.  I am very, very excited to start teaching this format.  What a great class for children.

    I would like to share a couple new recipes with you that I found today.  They look super good.  The first one is a yummy salad.  Here it is:

    Chickpea, Avocado and Pea Shoot Salad:

    1/2 small red onion, minced
    1 large carrot, finely chopped
    2-3 radishes, thinly sliced
    1/2 c. spinach
    1 (15 ounce) can chickpeas (garbanzo beans), rinsed and drained
    4 c. water
    1/2 red bell pepper, finely chopped
    2 avocados, peeled, pitted and diced
    1 c. pea shoots, watercress or broccoli sprouts, washed

    Dressing:

    1 Tbs. extra-virgin olive oil
    1 Tbs. Balsamic Vinegar
    2 Tbs. Freshly squeezed orange juice
    1 tsp. finely grated orange rind
    1 Tbs. lime juice
    1/4 tsp. course sea salt

    To prepare salad, place chopped onion, carrots, radishes and chickpeas in a large bowl.  Bring 4 cups of water to boil and pour over vegetables.  Let stand 2-3 minutes.  Drain well and set aside.
    To prepare dressing, whisk together all ingredients in a small skillet over medium heat.  Simmer until thoroughly heated.
    Add red pepper, spinach, avocados and pea shoots to chickpea mixture and drizzle dressing over top.  Toss to coat; serve warm.

    This salad looks so delish!  I want to make it for dinner tomorrow, so I better get all of the ingredients at the store!  Here is another recipe:

    Zucchini Cakes: 

    3 c. coarsley grated zucchini
    1/2 tsp. salt
    1 c. wheat breadcrumbs
    1 egg
    2 green onions, thinly sliced
    1/4 c. diced red bell pepper
    1 1/2 tsp. Old Bay seasoning
    1 tsp. dijon mustard
    1 Tbs. mayonnaise or plain yogurt
    1/8 tsp. red pepper flakes
    2 Tbs. canola oil

    Place grated zucchini in a colander; sprinkle lightly with salt and let stand for 30 minutes.  Press with paper towels to remove as much liquid as possible.  Zucchini should be fairly dry, and you should have about 2 cups.  Place zucchini and remaining ingredients (except canola oil) in a bowl.  Mix well.  Form into 8 patties the size of crab cakes.  Chill for a few hours.
    Place cakes on baking sheet and brush with canola oil.  Bake at 450 degrees until lightly browned.

    Ooohhh just think how yummy this recipe will be in the summer with all of that fresh zucchini squash growing in the garden!!  I am very excited to try this one.  If any of you try it first, let me know how it is!

    I taught Zumba tonight.  Tuesday night is not my normal night to teach, but our main instructor and I switched nights because of some plans she had made.  So tomorrow night, I will attend her Turbo Kick class!  That class really kicks my rear end.  But that is good!  I gotta keep moving!

    Day 35- Back on track

    I am back on track.  I was a little nervous after I fell off the wagon Saturday, but I am going strong again!  I just want to say that if you are on a journey like I am, and you have a day where you stray from your plan, just get right back on the road again the next day.  Easy enough.  A lot of people, and I have been one of them, often think that once you mess up, that is it.  I have done that SO many times in the past.  Just pick up from where you left off.  No biggie. 
    My body was actually very happy that I got back on my plan!  It is amazing at how we feel when we are not eating well.  I know I had a hard time Sunday after splurging a little on Saturday.  But the baby shower was a success and so much fun.  Below is a picture of my mom and I at the event.  A wonderful day, indeed!

    Day 33 and 34- Confession Time

    Hello friends!  Oh, I have been dreading writing this blog tonight.  But it has to be done.  The good news is that the baby shower was a success!  Bad news is....I fell off my plan.  Not real bad, though.  I guess it goes to show I am human!  I had a stressful morning trying to get things prepared, and I did not have any breakfast or a mid-morning snack (big mistake).  By the time I got to my mom's house at noon, I was terribly hungry.  The shower started at 1:00 pm, and I thought I was going to faint because of hunger, but I was on auto-pilot because I was hosting this party and just kept going.  By 2:30, I caved in and ate.  Everything was so delicious!  I did not eat a whole bunch, but more than I am used to.  I did, however, indulge in a lot of salad and fruit.  So I guess that is good!  I will list what I ate on the meal plan at the end.

    It is not the end of the world.  I started back up again this morning.  Only problem is, I felt terrible and my stomach was all messed up due to the rich food.  Was it worth it?  Yes and no.  I think it is ok to enjoy once in a while.  I just didn't want to enjoy it so soon.  But that's ok. I just don't like the way I feel after eating something that's not on my plan.  My mom made these wonderful Vietnamese Egg Rolls. Oh WOW....are they good.  I did have two of those, and they were quite small.  All day today, I drank tons of water and tea and ate fruits and veggies.  I am finally feeling good again. 

    I took lots of pictures, and my brother took a picture of my mom and I, which I wanted to post on here.  But I have been in a panic all day because I cannot find my camera anywhere.  I know I put it back in my car, but it is nowhere to be found.  :(  When and if I find it, I will post pictures of the shower on here. 

    The shower was wonderful and my sister-in-law got lots of really nice things for the twins.  And LOTS of diapers, which I know she will be grateful for.  I remember back when I had my son, I got lots of diapers at one of my showers, and I did not have to buy diapers for the first six months.  It was wonderful!  I am so excited for these babies.  It has been a long time since there have been any babies in the family, and I am just delighted.  Aunt Becky will spoil them and love them!  :)  How exciting!

    Today was a relaxing day.  I did not do much due to not feeling so well, but it was nice to just relax with my family. 

    Well, I am going to read for a bit, then go to bed.  I am glad I am done blogging about my eating blunders from yesterday!  But it will all be OK.  Oh yeah.

    Day 32- Catching up!

    Sorry everyone...I am a few days behind here, but I am going to get caught up.  It's been very busy around here lately!  But that is good because it keeps me pre-occupied.  Being busy is ALWAYS a good thing!  I have been practicing my ZumbAtomic and trying to get the music in my head.  What a fun, refreshing and lighthearted program this is!  I do realize that working with little kids can be challenging at times, because their little minds are different and their attention spans are not very long.  We learned in training that you cannot let more than 7-8 seconds go by without doing anything or else you will lose them.  For instance, if you run over to your ipod to change music and it is taking more than a few seconds, tell the kids "Touch your toes!" or "Reach up to the sky!"  :)   Always keep them going.

    I am excited to start teaching this format!  But I am also going to start doing ZumbAtomic birthday parties!  Parents LOVE to have someone come in and plan a party for their kids and make it FUN!  So, I am working up a package where I can go in and teach ZumbAtomic and it will include lunch and treats.  Fun day, hu?  There are two age groups for ZumbAtomic.  Little Stars for ages 4-7 and Big Stars for ages 8-12.   I could possibly start at age 3, but in training, we were told to start at 4.  I just don't how their attention spans would be at age 3, but it is worth a try!  For more info, please contact me!  (Locals, that is!)

    My eating plan has gone well, and I am noticing a difference in my clothes.   I think that is the best feeling in the world.  I can't wait for the day when I can fit into a pair of jeans.  Years ago, when I was a little thing, I used to LOVE wearing my jeans and cowboy boots.  I was a little cowgirl in those days...singing in a country band and riding horses a lot.  It was liberating wearing those jeans and feeling good.  I have not worn jeans in YEARS.  I think I still have a couple pair of Wranglers hanging in my closet from the years of 1986-1990.  Wow....so long ago.  But it is possible.  A lot of people have told me that I can never go back to that.  I don't believe them.  Why couldn't I go back to that?  I am still the same small framed gal underneath it all!  I just need to shed the pounds and I'll be right back to where I was.  I do realize that as we age, we need a little more weight for our bones, but I don't think we need THAT much.  I'll tell you what.....my bones are looking forward to having a lot LESS weight on them.  Sheesh...especially my knees!

    Day 31- Late Post! Sorry

    Hello, hello!  I need to start blogging earlier in the evening.  I was just so tired after teaching Zumba last night!  But it was definitely a good tired.  I came home and crashed.  It was another fun night teaching Zumba at the church.  A lot of nice new faces!  I sure love spreading the love and joy of Zumba. 

    Yesterday was a busy day.  My mom and I are trying to get things ready for this baby shower we are doing.  I have been preparing food for the past few days.  I made Chocolate Chip Banana cupcakes and put them in the freezer.  Oooohhh these little guys are so delicious.  I want one baaaaad.  Then I made chocolate dipped pretzels.  Aye aye aye!  My mom is having a chocolate fountain and fresh strawberries.  This day will surely be one that tests me.  I know I can probably enjoy a little, but I don't know if I will.  I am trying to get off a certain amount of weight before I enjoy any treats.  Also, there are just some foods that trigger my eating, and I am a little scared that if I popped one of those luscious cupcakes in my mouth right now, I wouldn't stop at just one. 

    We are also having Chicken Salad Puffs, Vietnamese Egg Rolls (which are heavenly), Chicken Ramen Salad, veggie tray, nuts, mints and M&M's.  Looks like I will be eating fresh strawberries and veggies.  That is ok.  It is not the end of the world.  Baby showers are for welcoming a new baby (babies) into the world and to celebrate.  The food is just the icing on the cake (no pun intended)!

    Day 30- Ducks in a row

    Well, I had a disastrous morning, but the day got better. I don't want to dwell on the bad, so I'll make it short. I woke up to a flooded basement. Not extremely bad, but bad enough to where there was water on the cement floor right underneath our upstairs bathroom. Nothing major was damamged. Just a bunch of shipping boxes I use for my products. I went downstairs to get ready for Zumba (I was supposed to teach today) and I heard water dripping. Oh no. Thank goodness I found it when I did. I got out the Shop Vac and sucked up all the water and had to quickly move things around and throw out the boxes. I think the worst part about it was that I had to reach my instructor to tell her I couldn't teach at the studio. :( She ended up canceling the class. Boo hoo!

    I am a girl who likes my ducks in a row. When my schedule is interrupted, it throws me off kilter. Some people can handle these situations with no problem. I sure wish I was more like that. Sometimes keeping your ducks in a row and being a perfectionist is not always great. I am trying more and more to relax a little! LOL But waking up to a flooded basement really kinda freaked me out this morning. Not fun at all. But I got through it and got the mess cleaned up. Crazy!

    My ducks slowly got back in a row as the day went on. I managed to get everything else done as planned. The best part of my day was when I traveled over to Brigham City tonight to do Zumba for my friend's Relief Society class. They LOVED it! Bunco was tonight, but I got a sub and went over the mountain to teach Zumba instead. None of these women have done Zumba before so I had to show them a lot of the basic steps beforehand. I love introducing this awesome program. They smiled and had a good time the entire hour, and most of them said they were going to find a Zumba class right away in Brigham. I wished I lived closer so they could come to my class. But I know there are great instructors over there!

    Here is another recipe from my Exhilarate program guide. I am going to try and make this over the weekend. I still need to make those stuffed peppers, too! Looking forward to trying this one!

    Beef Barley Soup

    1 tsp. olive oil
    2 oz. beef tenderloin
    1 c. sliced mushrooms
    1/2 c. diced onion
    1/2 c. chopped carrots
    1 chopped garlic clove
    2 1/2 c. low sodium chicken broth
    1/2 c. cooked barley
    1/8 tsp. dried thyme or 1/4 tsp. fresh thyme
    1/4 tsp. dried parsley or 1/2 tsp. fresh parsley

    Heat oil in a saucepan over medium-high heat and add beef. Brown meat for about 3 minutes. Add mushrooms, onion, carrots and garlic; saute for 4 minutes. Add barley, chicken broth, thyme and parsley to the pot and bring to a boil. Reduce heat and simmer for 45 minutes. Season with pepper to taste. Enjoy!

    Now, that soup looks delicious! I don't think I can wait till the weekend to make it. I'll try to make it tomorrow!

    Day 29- Spring Cleaning (Sorry...a day late because I couldn't get it to publish last night!)

    Oh the joys of Spring! Well, cleaning is not one of them for me. I really dislike cleaning, but it is something that has to be done. I started my cleaning one room a day today. I started with the computer room, but only got half way done. It has a ways to go! Yikes. I have got a lot of sorting to do in there, and so much stuff to get rid of! How liberating it will be when I de-junk this house!

    This week will be busy. My mom and I are getting things ready for my sister-in-law's baby shower. This is so exciting for me because she is having twin boys and I am so excited to be an aunt! We have a big, fun shower planned for her on Saturday. It will be so wonderful to have babies in the family again! It has been a long time.

    I have a great new recipe for you all tonight. I received my "Exhilarate" dvd program from Zumba today, and inside was a booklet with an exercise program guide and some good recipes. I tried this salad tonight and it was great! Here it is:

    Omega-3 Power Salad

    3 oz salmon
    1 1/2 cups baby spinach leaves
    2 Tbsp. chopped walnuts
    1/3 c. sliced red pepper
    1/4 c. thinly sliced red onion
    1/4 c. chickpeas (garbanzo beans)
    1 tsp. olive oil
    1 Tbsp. balsamic vinegar
    1 tsp. honey

    Preheat non-stick skillet over medium heat. Cook salmon about 4-5 minutes per side for well done. Place spinach, walnuts, peppers, onions and chickpeas on a plate. Combine olive oil, vinegar and honey and drizzle over salad. Top with Salmon.

    This salad is truly delicious! And very full of vitamins and protein! There are a few other recipes in this pamplet and I will share more as the days go on.

    This Exhilarate program looks wonderful. Zumba has added some new formats to the program, and they are included in this dvd collection. The dvd's in this program are- Step by Step, Activate, Rush, Exhilarate, Ripped, and Mix. The Ripped program is done with toning sticks and Senteo, which is a workout from a chair. I have not watched these yet, but plan on watching at least one when I am done with my blog here. I will report back tomorrow to let you know how it is!

    Day 28- Girls Day Out

    The sun was out today and it was glorious! To make it even better, I went over to Ogden with my mom and a good friend to visit Rainbow Gardens again. Now that the weather is getting better, we will be making several trips over there. :) The one gift shop, Planet Rainbow sells my Kool Aid wallets. So, I had to restock while I was over there today. We also did a little shopping at other places while in the Ogden area. Just a nice little girls day out!

    I am so ready for spring. So I bought a bunch of artificial flowers to arrange in a lovely vase. I also bought some light up branches with some purple butterflies. Here is what the display looked like: (I will take a better pic when I get mine done)


    I stuck to my plan like a pro. It is getting easier all the time and I am getting closer to my goal every single day! Creamy buckwheat cereal has become a breakfast favorite. I really did not think I would like it, but I love it! There are lots of good, healthy foods out there that actually taste very good. Tomorrow I am going to make roasted veggies. My friend said they taste just like candy!

    Day 26 & 27- Our Inner Child


    Hi everyone! I am sorry I did not blog last night. I was SO tired from my ZumbAtomic workshop! But it was a good tired, and I was floating on a cloud when I left the training. What an amazing day! For those of you who don't know what ZumbAtomic is, it is Zumba for kids, a specially designed class for children at the recommended age group of 4-12. There is the "Little Stars" class for ages 4-7 and the "Big Stars" class for ages 8-12. I have been looking forward to this workshop for a long time, and it was everything I thought it would be!

    When I arrived yesterday, it was registration and all the women (there was one man) seemed reserved and ready to be sexy Zumba queens. By the end of the workshop, we were all dancing around like penguins, puppies, dinosaurs, and monkees! You should have seen the looks on men's faces who were watching our class through the glass walls. It was priceless! We were all different people by the time the class was over. It was fun to have our "inner child" come out and feel playful. When our inner child comes out, we don't have a care in the world, and it nourishes the mind and soul. We all need to let loose once in a while and let our inner child shine. With ZumbAtomic, I will be able to do that a lot! Our ZES, Lindsey Taylor, (I feel like I can say her name on here because she is pretty famous in the Zumba world) told us that if we feel silly doing these dances, then we should not be teaching children. Well, I will have no problem at all. I am a big kid at heart, and even a bit goofy at times. She showed us a dance called "The Chihuahua Song", and that was the cutest darn thing I have ever seen. I felt like I was 5 years old again while we were doing it. This is definitely a program I will love! Here is a picture of our ZES and me at the end of the workshop:


    After the class was over, I went and visited my sweet sister-in-law in Salt Lake City. She is having some health issues right now, so I really wanted to stop and see her while I was in the area. She seemed to be doing better, but it is always a joy to see her. She has two of the cutest pug doggies (I have 3, and I got all of mine from her) and I sat and played with them for awhile, too.

    I stuck to my meal plan real good yesterday, even though I was away from home. I planned ahead and took a real nice lunch with me. I always seem to get so hungry when I go to those workshops because I burn up a lot of calories. But I packed nuts, fruits, veggies, and a nice salad. Here is what I ate yesterday:

    I slept in this morning, and it was wonderful! I was just plum tuckered out. But when I did get up, I was refreshed and excited to start learning all of my ZumbAtomic choreography and games. Oh, and if you think teaching this class is a piece of cake, think again! It is extremely high energy and intense. LOTS of jumping! Another incentive for me to get the weight off....so I can be as energetic as a 5 year old! :) We learned a dance where in one part you have to jump on one leg, then the other. Oh boy. I can't do that very well yet. Everything was easy till I got to that part. Another 30-50 pounds and I should be ready to go. Good thing I am running on the treadmill and getting my endurance up! I have got to get ready to keep up with those kids!

    Today I just hung out with my family and then went to the store for my weekly shopping. The day went by kind of fast because I didn't get my lazy butt out of bed for a long time! (But it was sooo worth it) I worked dang hard yesterday.

    Day 25- 20 pounds!

    Oh my goodness...I weighed myself this morning and I am down 20 pounds! That is a darn good weight loss for 4 weeks. I am very, very pleased! After turning 40, my metabilism has died, and losing weight has been very difficult. So, this just goes to show that your diet is about 80-90% of your weight loss. Eating clean is paying off! I forgot to mention in my blog yesterday that I went to the gym and ran for 30 minutes straight on the treadmill. What an accomplishment. Of course, I had good Zumba music playing in my ears to keep me moving! :) I know in the weeks to come, the weight loss will slow down, and that is normal. But hey, I am going in the right direction!

    Tomorrow morning I head to Salt Lake City to train for Zumbatomic. I am SO excited! Zumbatomic is Zumba for kids. This is going to be so great because I can't wait to do Zumba with little ones. Children love to move and dance, and they always keep things so simple. I have been looking forward to this training for a long time. Zumbatomic has not quite taken off yet here in the valley, and I am eager to introduce it. I want to check on summer programs and school PE programs once I am trained. What a great program Zumba is! They also offer Zumba Gold for senior citizens and Aqua Zumba for water aerobics. Those will definitely be in the future for me. All in good time :)

    My advice to all of you: Stay focused. It is worth it! Keep your eye on the prize, whether it be good health, fitting into those old jeans, riding on the rides at Disneyland, feeling good in a swimsuit, etc. You can do it! Like I said before.....if I can do it, YOU can do it! Rock on!

    Day 24- Toxic People

    I have a lot to say tonight. This is a subject that is very touchy to me. It is about toxic people or saboteurs. Everyone has a toxic person in their life, and it can make you miserable.....if you let it. Luckily, since I have been on my journey this past month, no one has tried to sabotage me. Everyone has been VERY supportive. But in the past, especially when I was a young girl, there seemed to be more people who did not like me making good changes to my life. I am older and more fiesty now, and very strong willed. And I keep the toxic people at bay.

    Saboteurs do not scare me. They can try and try all they want to, but I know I am capable of saying "no thanks" and be ok with it. It is a powerful thing to say "no" and be in control of what goes into your mouth. For those of you eating clean right along with me, remember that! And it is ok to say no! If someone makes you feel bad for it, it is only because they are unhappy with themselves. Someone may even bring over a plate of cookies or some type of goodies to throw you off. When that has happened to me in the past, I just say "thank you" and give the treats to someone else.

    But these days, my main interference is toxic people. Toxic people will come in various forms and shapes. They can be very draining and can basically live by feeding off your good virtue(s). Moreover, you could be left feeling battered or emotionally drained of your all your energy.

    Toxic people will rob you of your life if you allow them and you may end up mirroring their image, as well as behaving just like them.
    Toxic people may:

    *Complain consistently
    *Gossip uncontrollably about you
    *Will put you down
    *Project a lot of anger
    *Extremely sensitive
    *Mostly defensive
    *Very controlling
    *Very Jealous
    *Very manipulative
    *Joy and dream killers
    *Insecure
    *Very Disrespectful

    Do you know someone who always makes you feel depressed, angry or just plain tired? Think about this person. Is he or she a complainer, or someone who always expects things to go wrong, or someone who constantly finds fault with you? Does he or she always seem more cheerful after ranting to you? If any one or more of these is the case, you likely have a toxic person on your hands.
    If you have an easy way to get this person entirely out of your life, you'll be better off instantly. Of course, often it is not so easy, when the toxic person is a co-worker, family member or even a long-time friend. Especially family. The best way to deal with a toxic family member is to learn to tune them out, because inevitably, you will have to be around them.

    I brought up this subject today because while I am on this journey, I try to keep things as positive as I can. Yes, I know there will be some days that are not so good, and that is life. But I have learned to keep toxic people at an arms length. I don't like feeling depressed or down. Sometimes, having to deal with toxic people can trigger food addictions because of the stress. I do not do good with stress. It brings on anxiety and makes my body hurt. Try to keep the people around that love you for who you are and support you in all that you do. Just remember that people who are always negative, mean, or who are talking smack about you, are unhappy people.

    I had a situation not long ago with a very toxic person. For 6 months I felt like I was on a roller coaster ride with this individual. The hard part was that I am such a nice girl, and I tried to help this person, because that is just the way I am. Nothing was ever right, and I came to terms that it was not me doing anything wrong. This human being is no longer living anywhere close to me and is not a part of my life. Thank goodness! Having he/she around was making me crazy and very cranky. I care about this person, but I am done. I wish them the best. But now, it is time to take care of me. No more trying to help those that do not help themselves.

    Anyway, my advice to you is to take care of yourselves. Don't let anyone bring you down! And believe me, there will always be someone trying to tear you down to build themselves up. I still have a few in my life that try, but they can't touch me. I will succeed. And I hope the rest of you will, too! That is all :)

    PS....I nailed the Samba tonight when I taught Zumba at the church. Weepah! It felt so good. I practiced that dance all day long. I told you I would get it. Practice makes perfect! (Practice makes perfect with ANYTHING in life!)

    Day 24- New Restaurant

    We have a new restaurant here in the valley. It is called Chuck-A-Rama and it is a glorious buffet of good quality food...but a lot of fattening food. So, where did I go for lunch today? Yep. We went there. One of my good friends and I got together today and took our sons bowling, then went to lunch. Holy cow there was all kinds of food. The boys really wanted to go eat there, so I didn't want to be a pain and say no. I knew I just had to make the right choices. So, I filled my plate with nice green salad and veggies. Their salad bar is lovely, and I got lots of good things. I really haven't had any cravings up until today. Being around all that food almost triggered me. But I stayed true to my plan and ate salad and chicken breast. I also had some banana squash and green beans.

    I really wanted to have just ONE roll. Oh they looked scrumptious. But I have done so good. I just don't want to blow it. I have not weighed myself yet this week, but my clothes sure are feeling loose. I think that is the best feeling in the world! My goal is to have 50 pounds off by the end of summer. I'll just keep on going!

    I came home and worked on Zumba choreography for quite a while. I wanted to introduce my class to the Samba. I learned the Samba in the Basics 2 training, and it is a little difficult. But it is so much fun! I had a great little routine worked up to a song called "Matador." I broke three of the Samba steps down for the class and had all the confidence in the world that I would nail this dance. I looked like a total clod! It started out ok, but my hips and feet got all messed up. I came home with a burst bubble and feeling discouraged. Just over a dance! But I am going to get that Samba. I wish I could do it with ease like Beto's sidekicks on the dvd. They make it look so simple. I will practice that dang dance till I am blue in the face! I'm getting back up and dusting myself off and trying it again!

    I just finished the book "Water for Elephants." What a great book! I was sad when it ended because I wanted more. I am getting ready to download a new book onto my Kindle called "Too Precious for Earth." This book is written by a lady who is in my Zumba classes. I can't wait to start it!

    Day 23- More recipes!


    Hello friends! I have a couple of recipes here that I would like to share with you first. Last night, one of my facebook friends asked me for my creamy buckwheat cereal recipe. I only follow the cereal directions on the back of the box, but an old friend from high school posted under my link today and shared her wonderful buckwheat cereal recipe. I thank her very, very much! This looks absolutely delicious, and I can't wait to try it! Here is what she posted:

    "I make a delicious cream of buckwheat cereal from raw buckwheat groats. I rinse and then soak the buckwheat in the fridge in a jar...it will last a couple of weeks. This brings out the nutrients and makes it softer. I put about 1/4 cup of the soaked groats in a blender with a banana, some cinammon and about 2 inches of water..add some sea salt, blend it up and cook it on the stove on low heat. It's ready in 5 minutes and it's delicious. It's also great with fresh fruit, yoghurt, flax oil or a little maple syrup or agave nectar drizzled on top. Um Yum! ♥ (It's my famous buckwheat recipe..lol..everyone who comes over to my house requests it. Good luck u guys..and let me know if you make it!" ♥


    Here is another great recipe from a friend of mine on facebook. I am going to make this over the weekend. This is a recipe for Quinoa Stuffed Peppers. You will see a picture of this yummy entree at the top of the blog. (I tried to put the picture down here by the recipe, but failed. Still learning this blog stuff.)

    This dish freezes well for future meals. Quinoa provides whole-grain goodness and a serving of protein.
    Directions
    1. Heat oil in saucepan over medium heat. Add onion and celery, and cook 5 minutes, or until soft. Add cumin and garlic, and sauté 1 minute. Stir in spinach and drained tomatoes. Cook 5 minutes, or until most of liquid has evaporated.
    2. Stir in black beans, quinoa, carrots, and 2 cups water. Cover, and bring to a boil. Reduce heat to medium-low, and simmer 20 minutes, or until quinoa is tender. Stir in 1 cup cheese. Season with salt and pepper, if desired.
    3. Preheat oven to 350°F. Pour liquid from tomatoes in bottom of baking dish.
    4. Fill each bell pepper half with heaping 3/4-cup quinoa mixture, and place in baking dish. Cover with foil, and bake 1 hour. Uncover, and sprinkle each pepper with 1 Tbs. remaining cheese. Bake 15 minutes more, or until tops of stuffed peppers are browned. Let stand 5 minutes. Transfer stuffed peppers to serving plates, and drizzle each with pan juices before serving.

    Ingredient list:
    Serves 8
    1 medium onion, finely chopped (1 cup)
    2 Tbs. olive oil
    2 ribs celery, finely chopped (1/2 cup)
    1 Tbs. ground cumin
    2 cloves garlic, minced (2 tsp.)
    1 10-oz. pkg. frozen chopped spinach, thawed and squeezed dry
    2 15-oz. cans diced tomatoes, drained, liquid reserved
    1 15-oz. can black beans, rinsed and drained
    3/4 cup quinoa
    3 large carrots, grated (1 1/2 cups)
    1 1/2 cups grated reduced-fat pepper Jack cheese, divided
    4 large red bell peppers, halved lengthwise, ribs removed

    Today was a good day. Nothing spectacular happened, but that is ok. My meal plan went smooth and I just worked around the house and got a few things done. Not much to do on a gloomy rainy day, so my son and I just stayed home. The poor kid has a cold, so he didn't feel like doing anything. I feel bad he is sick over his Spring Break. :( However, tomorrow we are going to go bowling with some friends.

    I went to a turbo kick class tonight at the studio where I teach Zumba. Our main instructor added a turbo kick class once a week to the schedule, and let me tell ya....it kicked my butt! I am a creature of habit, so I favor Zumba over any exercise. But this class worked different muscle groups, and it sure worked me out good. I look so funny doing kickboxing, though! I feel very uncoordinated. I definitely punch like a girl. LOL I won't give up. I think it is good to mix up your exercise and have variety. I thank her so much for adding this class! I did mention in an earlier blog that I wanted to shake up my exercise this week. I want to try a spin class at the gym that I go to. Get me out of my comfort zone a little bit!



    Here is my picture of the week. My son settled down long enough today to snap it with my phone. Thank you, son! I know it is not a whole body shot, but most of the weight that I have lost has come off of my upper body anyway, and that is A-OK with me! :) I feel happy, glowing, and blessed.     Day 22- Great new habit

    Hello all! Well, it has been 22 days since I started. They say it takes 21 days to form a new habit. So, I have a new habit, and I am proud of it. It only took me 21 days to form it, and I am now at day 22. I don't have the cravings that I used to, and I can't believe I have come this far. Really! I feel like I am going to be successful this time because I am being consistent. That is the key: Consistency. I realize that I can enjoy my treats once in a while, but not while I am in the cleansing and detox phase. That is ok because I am feeling terrific. I don't even know if I want to treat myself with goodies. I want to treat myself with pampering and new clothes (Like the new bra...LOL)!

    Eating clean and whole foods has turned my life around for the better. I no longer have headaches or aches and pains in my body. It is truly amazing how different foods can make you feel. I realize I have said this all before and I am saying it again. You are what you eat!

    I went to Zumba this morning, then later on today walked/jogged on my treadmill downstairs. It is vital that we get up and move! Even if it is just putting on some fun music and dancing around the house! The weather is starting to get better, so go out for a nice walk.

    I took my son to see the movie "Hop" today. Very cute show! I am very excited to spend the entire week with him. He is at such a fun age and I love to hang out with him. He is such a smart and good boy, and definitely the best thing that has ever happened to me. The best day of my life was when I gave birth to him. He is the light of my life!

    Now off to read more "Water for Elephants." I love this book. There is some strong language and sexual content, but still a good book. Can't wait for the movie to come out! That will be for a girl's night out! Who wants to join me? Serious....let me know! I love movie nights with my gal pals :)

    My menu for today:

    Breakfast-
    1 bowl creamy buckwheat cereal with almond milk
    1 c. green tea
    32 oz water

    Mid-morning snack-
    1/2 c. mixed nuts
    16 oz water

    Lunch-
    Grilled chicken salad with sunflower seeds, celery, jicama, carrots, cabbage and low-cal Italian dressing
    16 oz water

    Mid-afternoon snack-
    Smoothie with 1 c. almond milk, 1/2 frozen strawberries, 1 apple and handful of spinach
    16 oz water

    Dinner-
    3 oz broiled Talapia (fish)
    1 c. green beans with almonds

    After dinner snack-
    1 c. sliced kiwi
