Oh the joys of Spring! Well, cleaning is not one of them for me. I really dislike cleaning, but it is something that has to be done. I started my cleaning one room a day today. I started with the computer room, but only got half way done. It has a ways to go! Yikes. I have got a lot of sorting to do in there, and so much stuff to get rid of! How liberating it will be when I de-junk this house!
This week will be busy. My mom and I are getting things ready for my sister-in-law's baby shower. This is so exciting for me because she is having twin boys and I am so excited to be an aunt! We have a big, fun shower planned for her on Saturday. It will be so wonderful to have babies in the family again! It has been a long time.
I have a great new recipe for you all tonight. I received my "Exhilarate" dvd program from Zumba today, and inside was a booklet with an exercise program guide and some good recipes. I tried this salad tonight and it was great! Here it is:
Omega-3 Power Salad
3 oz salmon
1 1/2 cups baby spinach leaves
2 Tbsp. chopped walnuts
1/3 c. sliced red pepper
1/4 c. thinly sliced red onion
1/4 c. chickpeas (garbanzo beans)
1 tsp. olive oil
1 Tbsp. balsamic vinegar
1 tsp. honey
Preheat non-stick skillet over medium heat. Cook salmon about 4-5 minutes per side for well done. Place spinach, walnuts, peppers, onions and chickpeas on a plate. Combine olive oil, vinegar and honey and drizzle over salad. Top with Salmon.
This salad is truly delicious! And very full of vitamins and protein! There are a few other recipes in this pamplet and I will share more as the days go on.
This Exhilarate program looks wonderful. Zumba has added some new formats to the program, and they are included in this dvd collection. The dvd's in this program are- Step by Step, Activate, Rush, Exhilarate, Ripped, and Mix. The Ripped program is done with toning sticks and Senteo, which is a workout from a chair. I have not watched these yet, but plan on watching at least one when I am done with my blog here. I will report back tomorrow to let you know how it is!

1 bowl of Brown Rice Crispie Cereal with almond milk
1 c. strawberries
1 c. green tea
32 oz water
Mid-morning snack-
1 hard boiled egg
16 oz water
Lunch-
4 oz. Blackened Salmon
1/2 c. mashed potatoes
Steamed Cauliflower, broccoli and carrots
Side Salad with low-cal Italian dressing
16 oz water
Mid-afternoon snack-
1/2 c. sunflower seeds
16 oz water
Dinner-
Omega-3 Power Salad
16 oz water
No after-dinner snack
