Well, I had a disastrous morning, but the day got better. I don't want to dwell on the bad, so I'll make it short. I woke up to a flooded basement. Not extremely bad, but bad enough to where there was water on the cement floor right underneath our upstairs bathroom. Nothing major was damamged. Just a bunch of shipping boxes I use for my products. I went downstairs to get ready for Zumba (I was supposed to teach today) and I heard water dripping. Oh no. Thank goodness I found it when I did. I got out the Shop Vac and sucked up all the water and had to quickly move things around and throw out the boxes. I think the worst part about it was that I had to reach my instructor to tell her I couldn't teach at the studio. :( She ended up canceling the class. Boo hoo!
I am a girl who likes my ducks in a row. When my schedule is interrupted, it throws me off kilter. Some people can handle these situations with no problem. I sure wish I was more like that. Sometimes keeping your ducks in a row and being a perfectionist is not always great. I am trying more and more to relax a little! LOL But waking up to a flooded basement really kinda freaked me out this morning. Not fun at all. But I got through it and got the mess cleaned up. Crazy!
My ducks slowly got back in a row as the day went on. I managed to get everything else done as planned. The best part of my day was when I traveled over to Brigham City tonight to do Zumba for my friend's Relief Society class. They LOVED it! Bunco was tonight, but I got a sub and went over the mountain to teach Zumba instead. None of these women have done Zumba before so I had to show them a lot of the basic steps beforehand. I love introducing this awesome program. They smiled and had a good time the entire hour, and most of them said they were going to find a Zumba class right away in Brigham. I wished I lived closer so they could come to my class. But I know there are great instructors over there!
Here is another recipe from my Exhilarate program guide. I am going to try and make this over the weekend. I still need to make those stuffed peppers, too! Looking forward to trying this one!
Beef Barley Soup
1 tsp. olive oil
2 oz. beef tenderloin
1 c. sliced mushrooms
1/2 c. diced onion
1/2 c. chopped carrots
1 chopped garlic clove
2 1/2 c. low sodium chicken broth
1/2 c. cooked barley
1/8 tsp. dried thyme or 1/4 tsp. fresh thyme
1/4 tsp. dried parsley or 1/2 tsp. fresh parsley
Heat oil in a saucepan over medium-high heat and add beef. Brown meat for about 3 minutes. Add mushrooms, onion, carrots and garlic; saute for 4 minutes. Add barley, chicken broth, thyme and parsley to the pot and bring to a boil. Reduce heat and simmer for 45 minutes. Season with pepper to taste. Enjoy!
Now, that soup looks delicious! I don't think I can wait till the weekend to make it. I'll try to make it tomorrow!

Mid-afternoon snack-
1 c. 3-bean salad
16 oz water
Dinner-
Mixed salad with imitation crab, shrimp, sliced jicama, carrots, tomatoes, green bell pepper, sunflower seeds, sliced boiled egg, and low-cal Italian dressing
16 oz water
After-dinner snack-
20 cashews
