Day 44- Mission accomplished! (Well, one of them)

Hey folks!  Well, I managed to get ALL of my computer room and living room clean and spotless.  Wahoo!  I will admit that it makes living a lot easier.  Just hate the process I have to go through to get there  :)
So, today was filled mostly with cleaning and running a few errands in town.  The highlight of my day was when it was finally time to go teach Zumba.

An good friend of mine from high school messaged me on facebook asking me when I teach classes, so I told her I was teaching one tonight and to please come.  So, she did, and it was great to see her!  This gal was one of my SkyView peeps and such a darling gal.  I often envied her because she owned horses, was in the rodeo club, barrel raced in rodeos, and was a true cowgirl through and through.  Like I said in a previous post, I sang and played country music, and hung with the crowd, but I always wanted to be the real thing.  (Later in college I met a cowboy and got to ride his horses all the time.  When we broke up, I missed the horses more than him!  LOL)  Well, she LOVED Zumba and I was just tickled.  I told her to keep coming back because it takes time, practice, and muscle memorization.  After a month or so, it is a piece of cake. 

Just like me, she is trying to get to a healthy weight, so she was happy to come and do Zumba for the first time.  I told her she was going to get addicted!  Weeeepah!  She is going to try and come when her work schedule permits it.  Class was fun and energetic, and I left there floating on a cloud.  After class was over,  I stayed to practice a few of my ZumbAtomic routines.  I told the ladies that anyone could stay after and join me to see what it was like, just incase they wanted it for their kids.

4 ladies stayed after to see and try it, and let me tell you....they LOVED it!  It is so cute and fun, and they were having the time of their lives penguin dancing to "Freezer" and skipping around to "Electrificate."  One lady told me that I should incorporate a ZumbAtomic routine into my regular Zumba class.  I just might do that!  It was awesome to see them let go and have kid-like fun. 

I would like to share a new recipe with you all.  This is a recipe from a "Healthy Recipes" book that I received from a friend a few years back.  Here it is:

Beef Teriyaki

1 lb. extra thin beef steaks or chicken breast
8 scallions, cut into short lengths
1 yellow bell pepper, seeded and cut into chunks

Sauce mix;

1 tsp cornstarch
2 Tbsp. dry sherry
2 Tbsp white wine vinegar
3 Tbsp. soy sauce
1 Tbsp. dark brown sugar
1 garlic clove, crushed
1/2 tsp. cinnamon
1/2 tsp. ground ginger

Place the beef in a shallow, nonmetallic dish.  To make the sauce, mix the cornstarch with the sherry until smooth.  Place the vinegar, soy suace, sugar, garlic, cinnamon, and ginger in a bowl and stir in the cornstarch paste.  Pour over the beef, then turn to coat and chill for 2 hours. 

Preheat BBQ grill.  Remove beef from the sauce, draining well.  Pour the sauce into a pan.

Cut the beef/chicken into thin strips and thread onto several presoaked wooden skewers, alternating each strip of beef/chicken with pieces of scallion and yellow bell pepper.

Gently heat the sauce until it is just simmering, stirring occasionally.  Cook kabobs on grill for 5-8 minutes, turning and basting the beef /chicken and vegetables occasionally with the reserved teryaki sauce.

Arrange the skewers on serving plates and pour the remaining sauce over the kabobs.  Enjoy!

Breakfast:
Smoothie with 1 c. almond milk, 1 scoop shakeology powder, 1 apple, 1/2 c. blueberries, one handful of spinach
1 c. green tea
32 oz water

Mid-morning snack-
1 c. strawberries
16 oz water

Lunch-
Tossed salad with shrimp, imitation crab, carrots, boiled eggs, tomatoes, broccoli, sunflower seeds and low-cal pomegrante dressing
16 oz water

Mid-afternoon snack-
10 baby carrots

Dinner-
3 oz grilled chicken breast
1/2 c. garlic mashed (red) potatoes
1 c. cooked cabbage with butter spray and vinegar
16 oz water

After-dinner snack-
Sugar free cherry jello  (yum)
